Quick Fix

Today when leaving work I just wanted to get home and relax…I knew we needed to eat (of course!) but I didn’t feel like putting that much effort and thought into it. Ever feel like that?

I decided on fritos topped with chili and cheese. Yummy yummy goodness!
I love watching Food Network shows for inspiration occasionally and the idea of taking already made ingredients and adding personal touches to make the meal more that just out of a can or container. That’s the only thing   one thing I personally like about Sandra Lee’ show. On the other hand, my pots, pans and dishes matching exactly what I wear from day-to-day… it just doesn’t happen in my kitchen, but I digress…

Cheesy Chili Fritos

– 2 cans Hormel chili w/beans
– 2 bags, 1 oz,  chili cheese fritos
– 2 tbs sharp cheddar cheese shredded

Heat on medium heat until nice and bubbly

Add fritos to the bottom of bowl

Add the chili and top with cheese… Perfection!

  1. Yummy, indeed! Gotta love the fun mix of salty, crunchy corn chips topped with savory, spicy chili and cheddar cheese. Try tossing in some chopped green onion for added zing. Hey, ever tried tamale pie? Take a square/rectangle pyrex dish, line it with tamales from a can (remove the paper rappers first and include the sauce). Sprinkle with chopped onion, add plenty of prepared chili (from a can or of your own recipe), add some chili cheese fritos and smother with shredded cheddar cheese. Bake in oven at 375 degrees for 30 min. Enjoy!
